One of the most difficult parts of any fitness journey is changing the way you think about food. Cutting certain foods out of your diet and incorporating new ones is a challenge for many people, so don't feel alone if you also struggle with this. This week's Healthier You recipe is for a strawberry chia pudding parfait. We like to put a few scoops of our collagen protein in the chia seed mix for a delicious boost of protein. We hope you love this recipe as much as we do!
Strawberry Chia Pudding Parfait
Yields 2 servings
14 oz. canned coconut milk
4 scoops AstroFlav vanilla collagen protein
6 T chia seeds
2 T raw honey
1 t vanilla extract
8 oz. fresh strawberries, chopped
2 T fresh lemon juice
To layer: unsweetened coconut flakes, slivered almonds, dried fruit, or whatever other toppings you like!
1. Combine the coconut milk, collagen protein, chia seeds, honey, and vanilla extract in a medium bowl.
2. Whisk well until the pudding is smooth. Set it aside for 2-12 hours to thicken (place it in the fridge if leaving overnight).
3. Before serving: toss the strawberries with the lemon juice and allow to sit for 5-10 minutes to soften.
4. Layer the parfait with the thickened coconut milk pudding, strawberries, coconut flakes, almonds, and any other toppings you like.
