W/ Vanilla Protein Frosting
One of the most difficult parts of any fitness journey is changing your mindset around food. Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! Since we are still in the midst of the holiday season, our healthy dessert recipes are perfect for all your holiday events! This week's Healthier You recipe calls for Gingerbread Protein Muffins, with a sweet vanilla protein frosting. This recipe is perfect for those who love gingerbread and want to add a little spice to your holiday baking. These muffins are fluffy and moist and spiced with our tasty Cinna Crunch Protein Powder. We hope you love this recipe just as much as we do!
1 cup whole wheat flour (I used King Arthur)
1/2 cup almond flour
1 scoop AstroFlav Cinna Crunch protein powder
1/2 cup coconut sugar
1 tsp baking powder
1/4 tsp baking soda
2 tsp ground ginger
2 tsp cinnamon
1 tsp allspice
1/2 tsp nutmeg
1/4 tsp salt
1 cup unsweetened almond milk
1/4 cup melted coconut oil
1/4 cup maple syrup
1 tsp vanilla
3/4 cup non-fat Greek yogurt
1/3 cup AstroFlav Vanillaprotein powder
1 tsp vanilla extract
Optional: Unsweetened coconut flakes
In a large bowl, add dry ingredients: whole wheat flour, almond flour, protein powder, coconut sugar, baking powder, baking soda, & all the spices. Mix until well combined.
In a separate bowl, combine all the wet ingredients: almond milk, coconut oil, maple syrup, and vanilla.
Prepare a muffin pan with muffin liners or grease the pan.
Pour gingerbread batter into each muffin liner about ½-¾ way to the top.
Bake the muffins @ 350° for 30-35 minutes. Keep checking muffins until golden brown and to prevent burning!
While the loaf is baking, create the frosting.
Combine vanilla protein powder with Greek yogurt and vanilla extract. Stir until well combined and no chunks.
Once gingerbread muffins are baked and cooled, spread frosting on each. Optional to sprinkle coconut flakes to make it a bit more festive!
Store in the refrigerator in an airtight container for 5-6 days.

Recipe notes:
You can replace ½ cup of coconut sugar with ¼-⅓ cup to make less sweet.
You can also sub almond flour with ¾ cup of oat flour.
To make recipe vegan, swap Greek yogurt with coconut yogurt. Replace AstroFlav IsoMix with our new Vegan protein powder!
If you do not have AF, sub with 3/4 cup oat flour!
Since the frosting is made with Greek yogurt, store muffins in an airtight container or in wrapped plastic in the fridge. Frosting will melt if they are left out too long!
