Healthier You: Pumpkin Chocolate Chip Energy Balls
One of the most difficult parts of any fitness journey is changing your mindset around food. Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! Pumpkin spice season is still here ladies and gents! If you're looking for a bite-sized taste of pumpkin pie, this recipe is for you! Not to mention, these energy balls are loaded with healthy fats and our Cinna Crunch protein powder for a perfect afternoon pick-me-up. Using very simple ingredients, these pumpkin energy balls are great for a healthy snack prep. If you love all things pumpkin, we are sure you will love this recipe!
1 cup quick oats (or old fashioned)
1 scoop AstroFlav Cinna Crunch Protein Powder
1/4 cup ground flax seeds
2 TBS chia seeds
1 tsp pumpkin pie spice
1 tsp cinnamon
1/3 cup semi-sweet or dark chocolate chips
1/2 cup almond butter
1/3 cup honey or maple syrup
3 TBS pumpkin pure (not pumpkin pie filling)
Combine. Oats, protein powder, flax, chia seeds, pumpkin pie spice, & cinnamon in a medium sized bowl.
Stir until well combined.
Addin wet ingredients: almond butter, honey & pumpkin pure.
Mix until sticky consistency and fold in chocolate chips.
Refrigerate for at least 15 minutes to harden the dough a bit.
Scoop. Scoop out 2-3" sized balls with cookie scoop or with a spoon and roll into balls.
Refrigerate and enjoy!
