Healthier You: Strawberry Protein Cheesecake Bites
One of the most difficult parts of any fitness journey is changing your mindset around food. Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! The beauty of flexible dieting is that you can take any of your favorite recipes and make them healthy! This week's Healthier You Recipe might just be one of my all time favorites. Strawberry Protein Cheesecake Bites are the menu today and we can't wait to share the recipe!
This recipe highlights our newest Strawberry IsoMix to give these mini cheesecakes 8 grams of protein each! The lightened up recipe makes these guys 75 calories each (so we won't tell anyone if you have more than one).

Strawberry Protein Cheesecake Bites
INGREDIENTS:
Crust:
1 1/2 cup graham cracker crumbs
1/2 tsp cinnamon

3 TBS butter (I used I can't Believe It's Not Butter)
Cheesecake Filling:
150g plain non-fat Greek yogurt (I used Chobani)
8 oz fat free cream cheese
60g liquid egg whites
40g AstroFlav Strawberry protein powder
8g SF Jello Cheesecake Mix
5g zero calorie sweetener
Sliced strawberries for topping!
DIRECTIONS:
Preheat oven to 325° and prepare a muffin tin with lightly greased muffins liners.
Add graham crackers to a zip lock bag (or food processor) and smash until they are in crumb. Add in melted butter and cinnamon and mix until well combined.
Divide crumbs evenly among the muffin liners (should 10-12 depending on how much you fill the liners). Use your fingers to flatten and pack crumbs to the bottom.
Bake mini crusts for 5-6 minutes or until golden brown. Remove and let sit.
While mini crusts cool, add Greek yogurt, cream cheese, egg whites, into a bowl and whisk or beat until well combined. Make sure there are no clumps!
Add in protein powder, SF cheesecake mix, and zero calorie sweetener. Mix until evenly combined!
Evenly distribute cheesecake mix into each of the cooled crusts.
Place mini cheesecakes in oven for 17-20 minutes or until the filling has set.
Remove mini cheesecakes from oven and let cool. Add cut up strawberries or any other toppings and enjoy!

Recipe notes:
Let the cheesecake bites cool completely before storing.
Store in refrigerator for 3-4 days.
Use room temperature ingredients (cream cheese, Greek yogurt, butter) to ensure smoothness.
Place cheesecake bites into a freezer safe bag or container and freeze up to 3 months.
Not at all! Cheesecake bites can be made without crusts or substituted with almond flour/oat flour!
Yes! They are high in protein, low in fat, and the added Greek yogurt lighten them up (so you can have more than one at a time;)!
