Protein Powder – AstroFlav Vanilla Redefined protein powder was used for this recipe for a sweet, versaitle flavor. Chocolate, Cinna Crunch, or Chocolate Peanut Butter IsoMix protein powder would also make for fun and tasty flavored donuts!
Almond Flour – Makes for a grain-free recipe, leaving donuts light and fluffy. If you're nut-free, opt for self-rising flour or oat flour.
Coconut Sugar – To make the donuts light and sweet. You can also swap for monk fruit, Splenda brown sugar, or even white sugar.
Egg – To add texture and fluffy texture. If vegan, swap for a flax egg by mixing 1 Tbs of flax with 2 Tbs of water and let sit for 5-10 minutes.
Butter – Only 1 Tbs of melted butter! You can also use coconut oil or any neutral-flavored oil.
Sprinkles – Can't go wrong with too many sprinkles!
Vanilla Protein Powder – Not only adds the Vanilla taste, but also extra protein.
Zero Calorie Sweetener – There are plenty of confectioner sugar substitue! For this recipe, I used Stevia zero-calorie sugar!
Milk of choice – I used unsweetened almond milk to thin the glaze out a bit.
Be careful not to over-bake donuts. Keep checking for a golden brown top and use a toothpick until it comes out clear, indicating that the donuts are done.
To avoid making a mess, you can out batter into a Ziplock bag and cut the corner off. Divide evenly among the donut molds. You can also use a pastry bag if accessible.
This recipe can be used for a muffin recipe as well if you do not have a donut pan!
Store donuts in the refrigerator in an air-tight container for up to 1 week.
Freeze donuts in a Ziplock bag and store them in the freezer for up to 6 months.
1/2 cup almond flour
1/2 cup AstroFlav Vanillaprotein powder
1 tsp basking powder
1/4 cup unsweetened almond milk
1/4 cup coconut sugar
1 egg
1 tbs melted butter (can sub coconut oil)
Rainbow sprinkles
Protein Vanilla Glaze
1/4 cup non-fat Greek Yogurt
1/4 cup Vanilla protein powder
2 TBS calorie-free sweetener
3-4 TBS unsweetened vanilla almond milk
1 tsp vanilla extract
Preheat oven to 350° and prepare a donut pan with non-stick cooking spray.
Whisk together all dry ingredients and mix in the wet ingredients until well combined. You may need to add more almond milk to create a smoother consistency.
Distribute the batter evenly among donut molds. You can also use a pastry bag to distribute with less of a mess!
Bake for 15-17 minutes or until donut tops are golden brown. Let cool.
Once donuts are completely cooled, dip top into the vanilla glaze and immediately sprinkle with rainbow sprinkles. Enjoy!
Substitutes:
Almond Flour: All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups
To make sugar free: Swap coconut sugar for stevia sweetened or Splenda brown sugar.
Almond Milk: Regular milk
Greek Yogurt: Coconut Yogurt
Toppings and additives can be adjusted based on preference! Try chocolate chips, coconut flakes, any type of crushed nut, or even extra frosting!
