Cookie & Cream Protein Muffins
What are these muffins made of?
Cookies & Cream protein powder - One of AstroFlav's sweetest protein powders; makes this recipe high-protein and Oreo-tasting goodness.
Oat flour- Simply blend old fashioned or quick oats to make a fine flour. Also makes this recipe gluten-free.
Bananas - Makes these muffins low fat and replaces the oil and butter usually needed in muffin recipes.
Greek yogurt – Helps with thick consistency and adds additional protein to the filling.
Non-fat Greek yogurt - Adds protein to these muffins, while also giving them a light & fluffy texture.
Oreos - Brings the recipe to a whole with the traditional Oreo cookie taste.
TIPS FOR CREATING THESE COOKIES & CREAM MUFFINS
If you're using muffin liners, grease them very well to ensure they don't stick to the muffins.
Use room temperature yogurt so the wet ingredients mix well with dry ingredients.
Make sure not to over-mix the batter as it will get tough and gummy textured.
Batter should be slightly thick and comparable to brownie batter. If batter is too dry, add in a few tablespoon of almond milk to ensure the batter has enough moisture.
HOW TO STORE COOKIES & CREAM PROTEIN MUFFINS
These protein muffins can be stored in an airtight container on the counter for 2-3 days or in the fridge for 5-6 days. They can also be stored in the freezer for 2-3 months.
Defrost muffins by taking them out of the freezer and placing on the countertop or fridge overnight.
Cookies & Cream Protein Muffins
1 & 1/4 cup oat flour
1/2 cup AstroFlav Cookies & Cream protein powder
1 tsp baking soda
1 tsp baking powder
2 mashed bananas
100g nonfat Greek yogurt
1/3 cup honey (or maple syrup)
1/2 cup nonfat Greek yogurt
1/2 scoop AstroFlav Cookies & Cream protein powder
1 TBS honey (or SF maple syrup)
In a large bowl, mashed bananas and stir or whisk in eggs, honey, and Greek yogurt.
When there is minimal clumps, combine dry ingredients: oat flour, protein powder, baking soda & baking powder.
Crush 1 Oreo and fold into the batter.
Divide batter evenly among 12 muffin liners and bake on 350° for 20-22 minutes.
Check the inside of the muffins with a toothpick or fork to ensure they come out clean.
While the muffins cool, mix together the protein frosting. Spread the frosting evenly among the muffin tops and top with an Oreo! Enjoy!
To gluten-free:swap Oreos for gluten-free Oreos.
