Healthier You: No Bake Protein Peppermint Bark Bars

No Bake Protein Peppermint Bark Bars
INGREDIENTS:
Base
1/2 cup AstroFlav Chocolate Protein powder
1/3 cup Oat flour
3 TBS Almond flour
5 TBS Cocoa powder (or Black Cocoa)
1/4 cup Unsweetened almond milk
1/2 crushed candy cane
Protein Frosting
2/3 cup AstroFlav Vanilla Protein powder
1/4 cup Non-fat Greek yogurt
1 TBS Almond flour
Chocolate Coating
1/4 cup dark chocolate chips (I love Lily's stevia sweetened)
1/4 tsp coconut oil
2 TBS crushed candy cane
DIRECTIONS:
In a large bowl, add dry ingredients: protein powder, oat flour, almond flour, cocoa powder, and crushed candy cane.
Slowly pour in almond milk, a little bit at a time and mix until dough forms.
Transfer to pan and press down firmly to flatten down.
For the protein frosting: mix vanilla protein powder, Greek yogurt, and TBS of almond flour until thick and smooth. If mixture is too dry, add more Greek yogurt.
Spread evenly on top of base and place in freezer for 15-20 minutes.
For the chocolate coating: Microwave chocolate chips and coconut oil in 30 second intervals until melted.
Remove the protein base from the freezer and spread chocolate coating on top.
Sprinkle crushed candy cane pieces on top and place in freezer for 5-10 minutes to let harden.

Remove from freezer, and cut protein bark out of the pan.

Calories: ≈ 120 cal; Carbs: 12 grams; Fat: 3 grams; Protein: 13 grams
To make recipe vegan, swap Greek yogurt with coconut yogurt. Replace AstroFlav IsoMix with our new Vegan protein powder!
Instead of almond flour, sub 5 TBS of coconut flour.
Since these bars require cold to keep frosting from melting, they can only be left on the counter for a few hours.
Store protein bars in an airtight container, and place in fridge or freezer for about 1 week!
