Healthier You: Holiday Protein Sugar Cookies

Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! Looking for a festive, high protein pre-workout snack? This week's Healthier You recipe calls for mini Holiday Protein Sugar Cookies! These sugar cookies are low calorie and high in protein, so we won't tell anyone if you have more than one! This recipe highlights our original, yet best-selling Vanilla protein powder. We hope you love this recipe just as much as we do!
Holiday Protein Sugar Cookies
INGREDIENTS:
Dry Ingredients:
50 gram AstroFlav Vanilla protein powder
1/4 cup almond flour
1/4 cup coconut flour
1/2 cup baking Stevia (I used Splenda)
1/4 tsp baking soda

1/4 tsp salt
Wet Ingredients:
1/3 cup Greek yogurt
1 egg
1/2 tsp vanilla extract
1/4 tsp almond extract
Holiday sprinkles
DIRECTIONS:
Preheat oven to 350° and prepare a greased baking sheet.
In a large bowl, mix dry ingredients: protein powder, almond flour, coconut flour, stevia, baking soda & salt.
Fold in Greek yogurt, egg, vanilla & almond extract.
Mix until well combined. Consistency may seem a bit dry, but keep mixing until cookie dough forms.
Fold in holiday sprinkles. Roll out 12 cookie dough balls and arranged them onto a greased baking sheet.
Bake for 7-10 minutes or until golden brown. Keep an eye on them; these cookies bake fast!
Let cool and enjoy! You can also add frosting for a sweet dessert.

Recipe notes:
You can replace ½ cup of baking stevia with regular sugar or coconut sugar.
To make larger cookies, roll out 8 cookie dough balls instead of 12.
To make recipe vegan, swap Greek yogurt with coconut yogurt. Replace AstroFlav IsoMix with our new Vegan protein powder!
If you do not have AF, sub with oat flour!
Store cookies in an airtight container in the refrigerator for up to 1 week!
