Healthier You: Protein Pumpkin Bread with Protein Cream Cheese Frosting

This incredibly tasting Pumpkin Protein Bread is perfect for the Thanksgiving dessert table! This week's Healthier Yourecipe calls for healthy Pumpkin Bread with a cream cheese frosting that just so happens to be packed with protein as well! Highlighting one of our original, yet most universal Vanilla protein powder, we are sure you are going to love this fluffy and delicious recipe. We hope you love this recipe just as much as we do!
Dry:
1 cup whole wheat flour *
1/2 cup AstroFlav Vanilla protein powder
1 TBS pumpkin pie spice
1 tsp baking soda
Wet:
1 cup pumpkin puree
2 eggs
1/2 cup Splenda brown sugar *
1/4 cup maple syrup
1 (5.3 oz) container 0% fat Greek yogurt (I like Fage or Chobani)
1/4 cup melted butter (or coconut oil) *
1 tsp vanilla extract
Cream cheese frosting:
4 oz 1/3 fat cream cheese
1/4 cup AstroFlav Vanilla protein powder
1/4 tsp cinnamon
1 TBS maple syrup
1 tsp vanilla extract
Preheat oven to 350°F and line a bread pan with parchment paper and nonstick cooking spray.
Add pumpkin puree, eggs, brown sugar, pure maple syrup, Greek yogurt, butter, and vanilla extract to a large bowl and mix or whisk together until well combined.
Next, add dry ingredients: whole wheat flour, protein powder, pumpkin pie spice, and baking soda. Mix together with a baking spoon until well combined.
Pour batter into the prepared bread pan. Bake for 30-40 minutes or until a toothpick tester comes out clean. Allow the pumpkin bread to cool before layering frosting.
To make protein cream cheese frosting: Beat cream cheese, protein powder, maple syrup, vanilla, and cinnamon together on medium speed until smooth.
Recipe notes:
* Whole wheat flour can be replaced with 1 1/2 cup of almond flour to make gluten free.
* Splenda brown sugar can be replaced with coconut sugar or light brown sugar.
* I used I Can't Believe It's Not Butterand the recipe turned out very well! Can sub melted coconut oil for an alternative.
To make pumpkin bread vegan:You can replace egg with 2 flax eggs.
Add a splash of almond milk to cream cheese frosting if needed.
