One of the most difficult parts of any fitness journey is changing your mindset around food. Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! The cinnamon roll cravings have entered the AstroFlav recipes this week! If you're looking for a fluffy and gooey cinnamon roll without all the added sugar, this week's recipe is for you! Single Serve Protein Cinnamon Rolls are on the menu today! Highlighting one of our favorite protein powder flavors, Cinna Crunch, this tasty & healthy treat is packed with 15 grams of protein! The best part is that this recipe is single serve, so all for you (the more protein the better right?). We hope you love this recipe just as much as we do!
3 TBS whole wheat flour (can sub GF or oat flour)
2 TBS AstroFlav Cinna Crunch protein powder
1/4 tsp baking powder
1 TBS plain Greek yogurt
1 TBS butter or butter alternative (I used whipped)
Filling:
1/2 TBS protein powder
2 tsp zero calorie sweeter (I used Splenda brown sugar)
1/4 tsp cinnamon
Spray butter
Frosting:
1 TBS plain Greek yogurt
1/2 TBS protein powder
1-2 TBS unsweetened almond milk
Preheat oven to 350°F and lightly grease baking dish or ramekin.
In a medium sized bowl, add flour, protein powder, baking powder, Greek yogurt, and butter.
Mix ingredients until a dough ball is formed. I used a spoon and "knead" the flour mix until dough formed, but you can put into a food processor for convenience!
Transfer dough to a lightly floured surface and roll out into a long rectangle.
Spray surface of the dough with spray butter.
Combine filling ingredients: protein powder, sweetener, and cinnamon. Sprinkle on the dough rectangle to cover the surface.
Using your hands, begin rolling one end of the dough to the other. (I then cut in half to make 2 small cinnamon rolls, but you can leave it to make a large one!)
Place in oven safe dish and bake for 18-20 minutes until edges are golden brown.
Let cool and drizzle frosting mixture (from ingredient list) on top!

Substitute whole wheat flour for 1-1 GF flour or oat flour.
Coconut sugar or brown sugar will work!
