Healthier You: Lemon Poppy Seed Protein Muffins

As warmer weather gives a taste into Spring, the burst of citrus flavor just might be what you're looking for! These Lemon Poppy Seed Protein Muffins are the perfect afternoon snack or dessert that are moist and full of citrusy flavor! Highlighting our best-selling Vanilla protein powder, these muffins serve as a good high-protein snack or served with ice cream for a fun, tangy dessert! Lemon Poppy Seed Protein Muffins

INGREDIENTS:

  • 1½ cup Oat flour

  • 1/4 cup AstroFlav Vanilla protein powder

  • 1/2 tsp Baking powder

  • 1/2 tsp Baking soda

  • 2 tbs Poppyseed

  • 2/3 cup Greek yogurt

  • 1/2 cup Unsweetened apple sauce

  • 1/2 cup Maple syrup

  • 2 eggs

  • 1 tsp Vanilla extract

  • 3-4 tbs Lemon juice (or full lemon squeezed for more lemon flavor)


Vanilla Drizzle:

  • 2 tbs Greek yogurt

  • 1 tbs maple syrup

  • 2 tbs almond milk

  • 1/2 tsp vanilla extract

METHOD:

  • Preheat oven to 350° and spray a 12-count muffin tin with nonstick cooking spray or line 12 muffin liners.

  • In a medium sized bowl, stir all dry ingredients.

  • Combine all wet ingredients into the same bowl and stir or whisk until smooth batter forms.

  • Divide batter evenly amongst the 12 muffin tins.

  • Bake for 25-28 minutes, checking frequently until muffin tops are golden.

  • Let cool before drizzling glaze. Enjoy!

Recipe notes:

  • To make grain free, sub oat flour with 2 cups of almond flour & eliminate the Greek yogurt.

  • To add more lemon flavor, add zest of a whole lemon.

  • To make sugar free, sub maple syrup with sugar free maple syrup.

  • You can swap applesauce with 2 mashed bananas.
