Healthier You: Lemon Vanilla Protein Waffles

This protein waffle recipe is a refreshing way to add some zest to your breakfast this summer! Lemon Vanilla Protein Waffles are on the menu this week and we are sure you are going to love this recipe! Highlighting our original Vanilla IsoMix, this recipe is full of zest and sweetness!

Lemon Vanilla Protein Waffles

ALL YOU NEED TO MAKE THIS RECIPE

Oats - Smoothens up the consistency while also adding sweetness.
AstroFlav Vanilla IsoMix - Puts the "cream" in Orange Cream.
Greek yogurt - Adds more protein and helps with consistency.
Honey - Sweetens up the waffles with natural sugars.
Egg - Allows for the waffles to rise and fluff up.
Lemon - Adds a yummy, zesty flavor to this recipe.
Almond Milk - Gives a creamy liquid to the recipe to make batter consistency.

KITCHEN EQUIPMENT REQUIRED FOR THIS RECIPE

High speed blender
Medium sized bowl
Waffle maker (I used a mini)

TIPS FOR CREATING LEMON VANILLA PROTEIN WAFFLES

Combine all dry ingredients before adding wet ingredients.
If batter is too dry, add almond milk in slowly until pancake-like consistency.
Juice lemon by cutting in half and squeezing until all the lemon juice is out.
Evenly spray waffle maker with non-stick cooking spray to avoid batter sticking to the trays.

Lemon Vanilla Protein Waffles

INGREDIENTS:

1/2 cup oat flour
1 scoop AstroFlav Vanilla IsoMix
1 tsp baking powder
1/4 cup plain Greek yogurt
1 egg
1 tsp honey
1 whole lemon (squeezed & juiced)
1 tsp vanilla
Splash of almond milk

DIRECTIONS:

Prepare waffle maker by pre-heating and greasing well with non-stick cooking spray.
Next, blend oats into fine oat flour.
In a medium sized bowl, combine all dry ingredients. Stir until well combined.
Combine wet ingredients to the dry ingredients until smooth, pancake-like batter. You may need to add almond milk little by little until smooth consistency.
Scoop large spoonful of batter into preheated and greased waffle maker. Allow waffle to fully cook until lightly golden.
Repeat the process until you use up the batter (mine made 4 mini waffles).
To make protein vanilla glaze: mix Greek yogurt, honey, vanilla extract, and almond milk until you have a runny consistency.
Drizzle over top of waffles, top with your favorite toppings, and enjoy!

Substitutes:

Oat flour: Swap oat flour for almond flour, whole wheat flour, or 1:1 GF flour!
Egg: Substitute egg with flax egg.
Greek yogurt: Swap Greek yogurt with coconut yogurt, cottage cheese, or 1/2 banana.
Almond milk: Can substitute almond milk with dairy milk, coconut, soy, or oat milk.
Honey: To make sugar free, swap honey with SF syrup or a calorie free sweetener
