One of the most difficult parts of any fitness journey is changing your mindset around food. Cutting certain foods out and incorporating new ones into your diet can be challenging for many people, and that's okay! Here at AstroFlav, we want to help you along your fitness journey by providing you with delicious (and healthy) recipes that will keep you dedicated to your fitness journey while allowing you to enjoy what you eat.
All-purpose flour: I used all purpose flour; you can sub with oat flour, whole wheat, or GF flour. Have not tested the recipe with almond flour yet!
AstroFlav Cinna Crunch IsoMix: Cinna Crunch works best for this recipe to give a cinnamon spice to correlate with the pumpkin flavor.
Unsweetened apple sauce : To replace the egg and butter in normal pumpkin recipes!
Pumpkin purée: Can't have pumpkin muffins without the pumpkin!
Greek yogurt: Non-fat Greek yogurt adds additional protein to this recipe.
Almond milk: I used unsweetened almond milk. Can sub for soy, oat, or regular milk.
SF maple syrup: Swap for light brown sugar, honey, or real maple syrup.
Vanilla extract
1-2 oven-safe muffin trays
Don’t over-bake:If muffins are over-baked, the texture will come out to be very dry.
Allow the muffins to cool while still in the muffin tin for just a few minutes. This helps create steam that releases the muffins from each cup.
Mix well, but don’t over-mix. You don’t want to mix the batter so much that it becomes too dense and hard to stir.
Experiment with toppings & mix-ins: Can make a cream cheese frosting or add nuts to give these muffins some extra flavor!
Add milk: Add a little extra almond milk if batter is too dry.
Dry ingredients:
180g all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
3 tsp pumpkin pie spice
Wet ingredients:
112g unsweetened applesauce
425g pumpkin purée
150g nonfat plain Greek yogurt
60mL unsweetened vanilla almond milk
4 TBS SF maple syrup
1 tsp vanilla extract
Preheat oven to 375°F and prepare two muffin trays by spraying them very well with non-stick cooking spray.
Add all dry ingredients into a large bowl. Stir until well combined.
Next, add wet to dry ingredients and mix until completely smooth and there are no clumps in the mixture.
Distribute batter into both muffin trays (should make about 18).
Bake for 15-17 minutes or until tooth pick comes out smooth.
Let cool and enjoy!
Substitutes:
All-purpose flour: Blended oat flour, whole wheat, or GF will all work.
Almond milk: Can substitute almond milk with dairy milk, coconut, soy, or oat milk.
Zero calorie sweetener: Swap sugar free maple syrup with Stevia brown sugar, regular maple syrup, or honey.
Cinna Crunch IsoMix: Swap Cinna Crunch with any of our IsoMix protein powders!
